1 large Sweet potato, cooked, skin removed2-3 Red Skinned Potatoes, cooked1 large Yukon Gold Potato, cooked.25 each Red, Yellow, and Green Bell Peppers, diced1 cup Fresh Green Beans, blanched.5 cup Mayonnaise.5 cup Sour Cream.25 cup Dijon Mustard.25 cup Bacon Bits.5 cup Scallions, chopped
1. Dice potatoes into bite-size pieces. Add remaining ingredients and toss to coat.
2. Season to taste with: Cayanne Pepper, Paprika, Salt, Pepper, etc.
