Quinoa with chickpeas and veggies

Ingredients
* Water- 2 cups * Chickpeas- canned: drained and rinsed- 1 cup* Bob's Red Mill Quinoa- 1 cup* Red Ripe Tomatoes- chopped- 1 cup* Garlic- 1 clove minced* Lime Juice- 1/5 cup or 3 tbsp* Olive Oil- 4 tsp * Red pepper- 1 cup diced* Cucumber- 1 cup diced (approx. 1 half cucumber) * Pepper, black, 1 dash- to taste * Cumin (in bottle or freshly ground)- 4 tsp
Directions
Bring the water to a boil in a saucepan. Add the quinoa. Reduce heat to medium and cook for approximately 15 minutes or until all the water is absorbed. Cover and let stand for 5-10 minutes.

Once done, stir in the chickpeas, cucumber, red pepper, tomatoes, garlic, lime juice, and olive oil. Season with cumin, and pepper.

Makes 6 approx. 1 cup servings

    Very good. Added some asparagus and scallions to decrease the amount of quinoa in a single serving. Added lemon zest although lime zest would work well and used apple cider vinegar instead of lime juice - 6/14/12

    Very good! Of course, I can't just follow a recipe to the tee. I cooked the quinoa in chicken broth. If going vegetarian, I am sure veggie broth would work too. Just adds another dimenision to the flavor. - 7/15/09
