Black Bean Chili

2 cans black beans1 can diced tomatoes1 can Rotel tomatoes with green chili's1 tsp olive oil1 green pepper, chopped1/2 medium onion, chopped2 cloves garlic, minced1/2 Tbsp cumin1 Tbsp Chili PowderSalt to taste
1. In a large stock pot or dutch oven pot heat 1 tsp olive oil. Cook green pepper, onion, and garlic until slightly softened.
2. Add tomatoes, black beans (rinsed to lower sodium content), and spices.
3. Bring to boil, reduce heat and simmer slowly for 45 minutes.
Makes about 6 1 cup servings
