Roasted Salmon with Lemon Relish

1/4 cup pine nuts1/4 cup raisinsSlivered zest and juice of 1 lemon1/2 cup boiling water4 skinless salmon fillets (6oz each)Coarse salt and fresh ground pepper1/4 cup chopped fresh parsley3 tbsp olive oil5 cups baby spinach
Serves 4
1. Preheat oven to 450. Toast pine nuts in oven, tossing occassionally until lightly golden, 5-7 minutes.
2. Place the raisins and lemon zest in heat proof bowl and cover with boiling water.
3. Place salmon on baking sheet, season with salt and pepper, roast until salmon is opaque throughout, 8-10 minutes.
4. Drain and discard the liquid from the raisins, add the lemon juice, pine nuts, parsley and oil. stir.
5. Dividing evenly, make a bed of spinach on plate, place a salmon fillet on spinach, spoon lemon relish on top.
