Aimee's Potato Salad

Ingredients
8 small to medium white potatoes peeled and cubed1 cup white onion diced1 medium sweet red pepper diced2 hard boiled eggs chopped2 tbsp honey mustard salad dressing1/2 cup low fat mayonnaise
Directions
Just cover the potatoes with water in a pot and boil for 10-15 minutes or until they are soft.

Also boil and peel the eggs, chop and set aside.

When the potatoes are ready drain them and allow them to cool for about 5-10 minutes.

When they are cool add all remaining ingredients and mix well.

Refrigerate until time to serve.

Makes about 8 1/2 cup servings.
