Hearty Chicken Minestrone Soup

Ingredients
1 head cabbage, diced2 cup carrots, diced2 cups zucchini, diced2 cups onion, diced2 stalks celery, diced2 cups fresh spinach2 cups corn, fresh frozen1 can red kidney beans, drained and rinsed1 can great northern beans, drained and rinsed 2 cans diced tomatoes (including the juice)1 (6 oz) can tomato paste128 oz. chicken stock, 100% fat free, low sodium16 oz. cooked chicken breast, diced1/2 tsp. Italian seasoning1/2 tsp. parsley1/8 tsp. black pepper
Directions
Place broth, and vegetables (except beans) in a large stock pot. Bring to a boil. Reduce heat, and simmer for 30 minutes or until vegetables are cooked through. During the last 10 minutes of cooking, add the diced chicken and beans to the soup. Recipe may be halved.
