Ingredients
New Potatoes, 300 gram(s) GREEN BEANS, FRESH STEAMED, 1 cup Red Ripe Tomatoes, 1 cup cherry tomatoes, halvedOnions, 0.5 red, small, very finely slicedOlive Oil, 2 tbsp Balsamic Vinegar, 2 tbsp Hard Boiled Egg, 2 large, quartered Chicken Breast, chopped into bite size pieces and cooked in frypan with 1 tbsp oil
Directions
Cook the new potatoes until tender, drain, cool and slice.

Cook the sliced green beans in boiling water for 3 mins, drain and refresh in cold water.

Toss the potatoes, beans, tomatoes and onion together with the oil and balsamic.

Quarter the hard boiled eggs.

Cook the chicken in the other 1 tbsp oil, add the chicken to the salad along with the egg and serve.
