Vegetable Farmer's Casserole

Ingredients
3 cups potatoes (with skin), finely chopped2 cups sliced mushrooms2 cups cooked or thawed frozen spinach1 1/2 onions, chopped4 cloves garlic, minced1 1/2 cup low-fat milk4 eggs3/4 cup cheese
Directions
Preheat oven to 350 degrees. Spray medium cooking pan with nonstick spray. Saute potatoes, onions, and garlic until potatoes are tender. Meanwhile, mix beat eggs and milk together in bowl. Spray square baking pan with nonstick cooking spray. Layer potatoes in baking pan; add mushrooms, spinach, and cheese. Season with your favorite herbs, and a little salt and pepper. Pour egg batter over top. Bake for 40-45 minutes.
