Oh My! Zucchini Bread

Ingredients
1 egg1/2 c. sugar1/2 c. unsweetened applesauce1 c. grated, raw, unpeeled zucchini1 c. whole wheat flour1/8 tsp. baking powder1/2 tsp. salt1 tsp. baking soda1 tsp. cinnamon1 tsp. vanilla
Directions
Mix together egg, sugar and applesauce. Beat thoroughly. Stir in zucchini. In separate bowl, sift dry ingredients. Add dry ingredients to zucchini mixture. Mix well. Stir in vanilla. Pour into greased loaf pan. Bake at 325 degree oven for 50-60 minutes. A toothpick should come out clean when put in middle. Makes 1 loaf -11 servings.
