Vegan Pancakes or Waffles

Ingredients
1 ripe banana, mashed2 cups water½ cup uncooked oatmeal1 ½ cups whole-wheat flour2 teaspoons baking powder1 teaspoon cinnamon1 teaspoon nutmeg1 teaspoon vanilla extract (optional)
Directions
Mix together the mashed banana and water
Add dry ingredients and mix, leaving lumps in the batter.

Waffles: Cook on a waffle iron, according to the manufacturer's instructions.

Pancakes: Pour 1/2 cup of batter into a hot, lightly oiled frying pan.

When bubbles rise through the middle of the pancake and break on the top, flip the pancake and cook until browned underneath.

    Absolutely delicious! The texture was perfect and they didn't taste like bananas at all. I used milk instead of water, though, since I'm not vegan. I also added 1 tbs of peanut butter. Next time I'll use a little more cinnamon. - 3/19/11
