Healthy grains banana breakfast muffins

5 medium over ripe bananas2 eggs1/2 cup lowfat soy milk1/4 cup extra virgin olive oil1/2 cup whole wheat flour1/2 cup flax seed meal1 1/2 cup steel cut oats1/2 cup blackstrap molasses1/2 cup organic cane sugar1 tsp vanilla1 tsp. baking soda1 tsp. salt1/2 cup walnuts
Preheat oven to 350 degrees
To a large mixing bowl, Add: banana, eggs, soy milk, and olive oil. Then mix on slow speed.
To above mixture: Add flour, flax seed meal, oats, molasses, and sugar, again mix on low.
To above mixture: Add vanilla, salt, baking soda. again mix on low until blended.
To this mixture, fold in nuts.
Pour into greased or papered muffin tins.
Bake for 15 to 20 minutes or until tops lightly spring back.
