Molten Lava Chocolate Cakes

12 oz Bittersweet Chocolate1 1/2 Stick Butter5.5 oz Sugar (about .8 cups)5 Eggs
1. Melt butter and chocolate in a double boiler or in a microwave
2. Seperate 5 eggs (yolks & whites)
3. Mix egg yolks with 1/2 sugar until a pale yellow color
4. Mix egg whites until a thick froth
5. Add in 1/2 sugar to the egg whites and mix to a peak
6. Fold yolk mixture into chocolate
7. Fold whites into chocolate mixture
8. Place batter in a lightly greased 12 muffin tin.
9. Refridgerate for 1 hour
9. Bake at 400 degrees for 8 minutes (the center should still be gooey).
Tip: Let them cool for a few minutes before transferring them to a cooling rack.
