Tortellini Soup with White Beans and Garlic

Ingredients
13 oz package of frozen cheese tortellini16 oz can of small white or navy beans2 cups coarsely chopped fresh baby spinach4 cloves minced garlic4 cups fat free, low sodium chicken broth1 cup water1 tsp sage or rosemary leaves1/4 cup grated parmesan cheese
Directions
Cook the tortellini according to package directions and drain, do not overcook!

Meanwhile, in a large saucepan, bring the broth, sage or rosemary, garlic and water to a boil. Once it is boiling, stir in the beans and spinach. Reduce heat and simmer for 5 minutes.

Add the drained pasta and simmer for another minute. Serve with 1 tbsp grated parmesan sprinkled on top.
