Thai Vegetarian Spring Rolls

Ingredients
1/2 Cup Bean Sprouts1/3 head of Green Cabbage, Chopped5 green onions, chopped1 Cup Bean Thread Noodles (Mung Beans)1/4 Cup Cilantro, basil or fresh mint, raw1/4 cup julienned Carrots, raw1 tbsp Lime Juice1 tbsp soy sauce1/2 tsp fresh Ginger, grated (optional)10-11 Spring Roll Rice Paper Wrappers
Directions
Toss together all ingredients except wrappers in large bowl. Submerge wrappers in hot water until pliable, about 15 seconds. Place about 2 tablespoons of mix on wrapper and wrap your spring rolls. Serve with dipping sauce and enjoy! Makes 10-11 spring rolls.
