Low Sodium Chicken Cacciatore

Ingredients

2 lbs chicken breast cut into bit sized pieces (may substitute with pork)1 cup chopped onions3 cloves garlic minced3 cans 16 oz cans of Tomatoes (no salt)3 tbsp cooking sherry1 tsp pepper1 tsp oregano2 tbsp olive oil
Saute chicken, onions and garlic in olive oil over medium heat, stirring until chicken appears white on all sides.
Stir in remaining ingredients except for the wine.
Bring to a slow boil. Reduce heat, cover and simmer over low heat for 45 minutes stirring occasionally.
Add cooking wine and simmer an additional 15 minutes.
Serve over white or brown rice with a nice green vegetable.
