Broccoli & Ginger Soup

Ingredients
Broccoli, fresh, 3 cup, choppedOnions, raw, .25 cup, choppedGarlic, 1 clove, mincedGinger Root, 1 tsp, mincedSoy Sauce, 1 tspSoy Milk Plain Light, 1 cup (or skim milk)Vegetable Broth, 1 cup (any lower sodium veggie broth)
Directions
Add all ingredients but soy milk in saucepan. Bring to boil and simmer for approximately 7 minutes until broccoli is just tender. Very carefully add to blender and blend with top slightly ajar to let steam escape (again, be careful blending hot ingredients). Puree. Add back to saucepan and stir in soy milk and slowly heat until hot enough to serve.

Garnish with some chopped red onion or some grated ginger if you like.

Makes 2 big bowls.
