1 Can of Black Beans, drained1 Can of Kidney Beans, drained1 Can of Pinto Beans, drained1 Can of White Corn1 Can of Diced Tomatoes1 Can of Rotel Tomatoes with Diced Green Chilies1/2 an onion3 cloves of garlic1 packet of ranch dressing mixSouthwestern seasoningPaprikaRed Pepper FlakesOregano2 C. waterSour Cream (if desired)Cheddar Cheese (if desired)Crumbled Tortilla Chips (if desired)
Chop onion and garlic and put in large pot. A crock pot can be used as well. Open and drain all the beans, and add to pot. Add corn, tomatoes, and chilies to pot. Stir ranch packet in the water and add to pot. Generously sprinkle Southwestern seasoning in pot. Add paprika, pepper flakes, and oregano to taste. Cook until beans are tender. Garnish with sour cream, cheese and crumbled tortilla chips if desired.
