Spicy Mediterannean Chicken Salad

Ingredients
-1 cup shredded iceberg lettuce-1 medium tomato-0.5 cup cucumber-1 medium red onion-1tbsp balsamic vinegar-Non stick cooking spray-5oz skinless chicken breast-fajita spice, or other hot spice mix-1oz low fat cheese (brie or feta will be best for this)
Directions
-Place shredded lettuce on a small plate.

-Slice tomatoes, red onion, cucumber and arrange on top of the lettuce.

-Place whole basil leaves onto salad.

-Cut cheese into small cubes and scatter over the salad.

-Dice chicken into 1" cubes and rub in the spice mix.

-heat some cooking spray in a pan then fry the chicken for 10 minutes or until cooked through.

-Place the chicken onto the salad and drizzle on the balsamic vinegar.

-Eat while still warm or keep in a sealed container for lunch.
