Zucchini Bread

Ingredients
3 cups all-purpose flour¾ tsp. salt1 tsp. baking soda2 cups sugar2 tsp. cinnamon1 cup chopped pecans3 lg. eggs¼ cup vegetable oil 1 cup unsweetened apple sauce2 ½ shredded zucchini2 tsp. vanilla extract
Directions
Combine all ingredients together in a large bowl. Stir only until all dry ingredients are moistened. Spoon batter into greased and floured loaf pans. (I use a variety of sizes but the recipe will fill 2- 8 ½ X 4 ½ X 3 inch loaf pans). Bake at 350 degrees for 70 min. (less if using smaller pans) until a wooden pick inserted in the center comes out clean. Let cool for 10 minutes then take them out of the pans to cool completely. Makes 24 slices-1 slice=1 serving
