Apple Tansy Casserole

4 eggs or egg substitute (nutr. info based on substitute)3 medium baking apples1/2 cup sugar (less if you want it less sweet)1 cup skim milk (you can use 2% or whole)1 tsp vanilla1/2 tsp nutmegEnough cinnamon to coat apple slices (1-2 Tbsp, or if you want it sweeter, use 2 Tbsp sugar and 1/4 tsp cinnamon)
Preheat oven to 325 F.
Pare apples and cut into thin slices. Coat with cinnamon or cinnamon sugar.
Beat eggs to a froth, add sugar and vanilla. Beat well. Add milk. Mix well.
Grease casserole dish. Line bottom with half the apple slices. Pour 1/2 egg mixture over top. Add another layer of the rest of the apple slices. Pour in rest of egg mixture. Sprinkle nutmeg on top.
Bake for 45-50 minutes, or until custard sets.
Makes 6 servings (small bowls).
