Spicy Cream Corn

1 tsp olive oil1 yellow onion finely chopped1/2 red bell pepper diced1 jalapeno finely chopped2 cloves of garlic finely chopped12 oz box frozen corn2 tsp flour3/4 cup 1% milk1/4 cup chicken brothfresh cilantro (small handful or to your taste) chopped
Heat olive oil in a small skillet over medium heat. Add onion, red bell pepper and jalapeno stirring occasionally. Once the onions and peppers have softened slightly add garlic and corn. Once corn is warm and all veggies are soft, sprinkle with flour, stir and let cook for 1 minute. Add milk and chicken broth. Let mixture simmer and reduce for about 5 minutes stirring occasionally. Remove from heat and stir in cilantro. Makes 4 servings.
