Fast Lamb Curry

Ingredients
1 lb. lamb (leg steaks are pretty lean)5 tsp. curry powder1 container (15 oz.) fresh marinara (refrigerated section)1 bag of fresh spinach (6 oz.)4 servings of whole wheat cous cous
Directions
Brown a pound of ground lamb with 5 teaspoons of curry powder and 1/2 teaspoon of salt in a large skillet. Stir in half a cup of water, a 15-ounce container of fresh marinara sauce, and a 6-ounce package of fresh baby spinach. Simmer uncovered 5 minutes. Season with salt and freshly ground black pepper to taste. Serve with naan (Indian flat bread) rice or cous cous if desired. (Serves 4.)
