1 box large shell pasta3 cups mashed potatoes4 oz neufatchel cheese1 cup low fat cottage cheese1.5 cups lowfat sour cream.5 cup low fat cheddar cheese1 cup sliced onions4 tbs EV olive oilsalt and pepper to taste
Cook shells according to package, drain and cool. Mix potatoes, neufatchel cheese, cottage cheese, and cheddar cheese. Use a small cookie scoop or tablespoon to fill shells with mixture. Place in baking dish sprayed with Pam. Top with sour cream, bake 350 degrees for 25 minutes. Saute onions until soft in oil. Pour over the pierogies and sour cream and bake 5 more minutes.
