1 C uncooked orzo2 small yellow squash6 large mushrooms, sliced4 garlic cloves1 whole lemon, juice and bit of rind1 Tbsp olive oilfresh parsleysalt free seasoning, optionalblack pepper
Cook orzo according to directions. Drain and set aside
While orzo is cooking, saute garlic in olive oil until soft. Add squash and mushrooms. Stir fry for 3-5 minutes until slightly soft. Add orzo and lemon juice. Season to taste. Garnish with fresh parsley
