Spicy Couscous with Chickpeas

0.5 tsp cumin powder0.5 cumin seeds0.5 tsp coriander powder0.5 tsp coriander seeds, lightly crushed1 tbsp olive oil 75g couscous. 2 tbsp toasted pine nuts, 80g chickpeas, drained & rinsed weight2tbsp chopped coriander 2 finely chopped spring onions0.5 - 1 finely chopped red chilli, (deseeded).
Heat a saucepan and dry roast the cumin and coriander seeds for about 30 seconds, until fragrant.
Add 75ml boiling water with the powdered spices to pan and bring back to boil. Pour couscous into pan. Cover and leave, undisturbed for 8 mins.
Remove lid, lightly fluffy the couscous up using a fork. Cool.
Add the oil and mix gently.
Add all the rest of the ingredients, except for lemon juice.Mix well.
When ready to serve, lightly stir in the lemon juice just before serving. (Add the zest too if desired), season to taste, serve.
