veggie stir fry

Ingredients
Stir fry:1 small zucchini (sliced thin)1 Bell pepper sliced(any color)2 green onions (for garninsh)1 clove garlic minced2 tbs olive oilsauce:1/2 cup water1 tbs cornstarch1 tbs soy saucepowdered ginger optionalRice:1 cup white rice
Directions
*Slice veggies ahead of time*
START COOKING RICE BEFORE COOKING STIR FRY!!!
1. combine soy sauce, water and cornstarch in a bowl and set aside
2. in a large skillet heat oil and add garlic
3. add veggies and cook until crisp tender (2-3 mins)
4. add sauce mixture and stir until thick and bubbly.
5. place cooked rice on platter with stir fry on top, garnish with green onions

serve with green tea... yum
