Chicken soup w/ elbows

Ingredients
chicken stock, chicken breast, carrots, celery, green beans, thyme, onion
Directions
Makes 6-8 hearty servings
peel carrots. Dice carrots, celery & onion. Heat olive oil in a soup pan over med heat. When hot add onions, carrots & celery. Cook about 5 min or until they start to soften. Meanwhile dice chicken, cut corn off cob and trim beans to 2 in lengths. Chop thyme as well.

After veg starts to soften add diced chicken and stock & water. Add 1/2 the thyme, salt & pepper & stir well. Allow to simmer for 30 min. After 30 min add green beans & corn, simmer 5 min then add pasta. Once pasta is soft the soup is done. Stir in remaining fresh thyme just before serving.
