Fresh Spinach, 3 cupsGarlic, 1 clove, choppedSun-dried tomatoes, 1/2 cup, choppedPine Nuts, 3 tbsp, toastedOlive Oil, 3 tbspSalt and pepper to taste.
Add clove of garlic to food processor, pulse 2-3 seconds. Add spinach, and pine nuts. Pulse until chopped. In the top of the closed processor, slowly pour in olive oil until pesto is smooth. Fold in chopped sun-dried tomatoes and salt and pepper to taste. Let sit for a few hours before serving.
