Stuffed Mexican Cornbread

Ingredients

1 lb ground beef1 med onion, chopped1-2 cloves garlic1 pkg taco seasoning2 med tomatoes, chopped1 cup salsa2 c kidney beans2 c corn1 c shredded carrots1 c grated cheese1 c flour1 c cornmeal3 tbsp sugar1 tbsp baking powder1/2 tsp salt 2 eggs1 c milk1/4 c oil
Brown meat and onions. Drain. Add taco seasoning and water and simmer according to directions. Transfer to baking dish (at least 9x12), with garlic. Add tomatoes, salsa, kidney beans, corn and carrots. Stir to mix. Top with Cheese.
Stir together flour, cornmeal, sugar, baking poswer and salt.
In separate bowl, beat eggs, milk and oil. Add to flour mixture and stir till just smooth.
Pour over meat mixture.
Bake 425 for 30 mins or till golden brown.
