Blueberry Bread Pudding

Ingredients

loaf of light whole wheat bread, cubed2 cups fresh blueberries2 cups 2% milk3 extra large eggs1/4 cup brown sugar1 tsp vanilla1/4 tsp salt1 tsp cinnamon
Preheat oven to 350 degrees F
Spray casserole with cooking oil
Cut up bread and place in large bowl with blueberries
Mix together all of the other ingredients and pour over bread
Press bread down with a spoon and stir until milk mixture is absorbed
Place in casserole dish and press down
Bake for 50-60 minutes or until center is set
Let sit. Reheat in the microwave before serving and add a dollop of whipped cream or vanilla frozen yogurt
