Clean-Eating Applesauce Pumpkin Muffins

2 cups Old Fashioned Oatmeal1 cup Unsweetened Applesauce1 cup Pumpkin Puree2 Eggs2 Egg Whites1 cup Light Vanilla Soymilk1 cup Unbleached All Purpose Flour1/2 cup Whole Wheat Flour1/2 cup Organic Sucanat2 Tbsp Baking Powder2 tsp Baking Soda2 tsp Cinnamon2 tsp Pumpkin Pie Spice1 cup Golden Raisins (optional but included in Nutrition Facts)Raw Unsalted Pumpkin Seeds to sprinkle on top. (I used about 1.4oz estimating 5 seeds per muffin/85seeds per oz and this is included in Nutrition Facts)
Preheat oven to 375 and line muffin pan with liners or spray with nonstick spray.
First combine all wet ingredients.
Then combine all dry ingredients and make a well in the middle. Pour in wet ingredients and mix together. Then fold in raisins.
Fill Muffin Cups 2/3 of the way full and then sprinkle the top with pumpkin seeds. Bake for 15-20min until the tops are golden brown.

For all the cinnamon and pumpkin pie spice, these muffins seemed very bland. Unfortunately, the saltiness of the baking powder was overpowing! I did not add the golden raisins....perhaps that was that would have enhanced the flavor. My 3 yo and 5 yo boys seem to like these muffins, though. : ) - 9/22/10
