Ingredients
Directions
3- boneless~ skinless chicken breast1- pkg Alouette Garlic and Herb Spreadable Cheese1 box (7oz) Zatarain's Long Grain/ Wild Rice (butter is optional in the wild rice and not used in my version)
Perpare wild rice from directions on box. While rice is cooking, Spray skillet w/ non-stick spray. Brown and cook chicken thouroughly on both sides. Add Alouette to chicken( when fully cooked) and lower heat to low. Allow Alouette to melt and simmer for a few minutes. Serve chicken breast over rice, spooning some of the sauce over the top.
*Note~ as said in intro, this is not "diet food". But it is still better than a chick-fried steak, or a burger. It makes a great meal for entertaining. You could have the fat/ cal/ carbs reduced signifigantly if you cut the serving in half. This recipe is calculated with a full cup of rice, a whole chicken breast, and 1/3 of the package of the Alouette. Cut that in half to have a wonderful meal with 325 cal/ 10g fat/ 25 carbs...I hope you enjoy!

Alouette does make a "light" spread that would cut the calories quite a bit, and this would also be good with Boursin's light cheese (but a bit more expensive.) You could also experiment with thinning the "sauce" with broth, milk, or white wine to make the cheese go further-- cut costs a little as - 7/11/09
