Sweet Potato, Pumpkin and Leek Soup

Ingredients
400g Butternut Pumpkin, peeled, scraped and chopped200g Sweet Potato, peeled and chopped1 Leek, finely chopped 30g or 1 oz of butter, salted1 chicken stock cube (broth or boullion)6 cups of water (hot or boiling)If you like a bit of spice, try adding some grated fresh ginger as well.
Directions
Fry/Sweat the leek in melted butter. When softened, add the chopped pumpkin, sweet potato and the hot water with a chicken stock cube dissolved in it. Boil until all the vegetables are soft.

Cool the soup and blend it until its smooth. Serve.

Makes 8 servings.
