Zucchini Brownies

Ingredients
2 c. Flour1/3 c. Baking Cocoa1 1/2 t. Baking Soda1 t. Salt2 c. Shredded Zucchini1 1/2 c. sugar3/4 c. vegetable oil2 t. vanillaFrosting:1/4 c. unsalted butter1 c. sugar1/4 c. fat-free milk1/2 c. chocolate chips 1/2 c. mini marshmallows1 t. vanilla
Directions
Shred zucchini with skin on (seeds removed). In a bowl, combine flour cocoa, baking soda and salt. Combine zucchini, sugar and oil; add to dry ingredients. mix well. Stir in vanilla. Pour into a greased 13x9x2 in. baking pan. Bake at 350 deg. for 35-40 min or until a toothpick comes out clean. Cool on a wire rack for 30 min.
Frosting:
In a saucepan, melt butter; stir in sugar and milk. Bring to a boil over med. heat stirring frequently. Boil and stir 1 min. Remove from heat. Stir in chips and marshmallows until melted; add vanilla. Spread over brownies. Let cool before cutting.
