Spinach Pie

Ingredients
3 eggs3 slices bread1 cup grated parmesan3 packages frozen chopped spinach, no sauce
Directions
Prepare spinach according to package directions and drain well. Blend with eggs, bread and parmesan cheese and spread in pie or quiche pan spritzed with olive oil. spritz top with olive oil and sprinkle with pepper. Bake at 325 degrees for 45 minutes or until golden on top.
(Eggbeaters can also be used in place of eggs if you prefer.)

    This is very tasty! I cubed the bread, added garlic, onion, and a little yogurt. I am sure that I´ll make this again and again. It is easy and nutritious! Worked great in microwave, too. - 3/28/07
