Spaghetti Squash Spaghetti

Ingredients
Whole squash1.25 lb ground turkey2 14 oz cans diced tomatoes1 small yellow onion, chopped3 garlic cloves, minced1 tsp olive oil1/2 C chopped green pepper1 tsp oregano1 tsp basil1 tsp parsley1 tsp black pepper1/2 tsp salt
Directions
Cut the squash in half, scoop out the seeds, poke the rind 5-10 times and cook face down in the microwave for 10-20 minutes depending on size.
Meanwhile, saute the onions, garlic, green pepper and turkey meat together until turkey meat is cooked. Drain the fat. Add in the diced tomatoes and seasonings. Allow to simmer for at least 15 minutes.
During that time the squash should be cooked and cooled enough for you to handle and scrape out the spaghetti strands. Once that is complete add that to the sauce and allow to cook together for 1 minute.
Top with parmesan cheese if you like.
