Chicken Penne with Roma tomato sauce

Ingredients
2 Boneless skinless chicken breasts cut into bit size strips1 Tbsp extra virgin olive oil1 large onion diced1 large carrot diced2 celery stalks diced6 gloves garlic minced1 Tbsp fresh oregano1 tsp basil8 Roma Tomatoes diced1 yam or sweet potato baked until fork tender then diced1/4 cup water1 lb Brown Rice Penne Pasta
Directions
Heat olive oil in a very large pan over medium heat add diced onions, carrots and celery and saute until soft but not browned. Add garlic, herbs and chicken saute for a couple minutes, add water, tomatoes, yams bring to a boil, cover pan reduce heat and simmer 20 minutes.

Meanwhile bring a large pot of lightly salted to a boil and cook pasta until al dente follow package directions.

When pasta and chicken are done toss together and serve.
