High Protein Mashed Potatoes

Ingredients
2 yukon gold potatoes2 cups fresh cauliflower florets1 can large butter beans
Directions
Chop potatoes into 1" cubes and steam for 10 minutes with cauliflower, until tender enough to mash with a fork. The cauliflower may take a little longer than 10 minutes to get fork-tender.

In a food processor, cream beans with cauliflower, then mash potatoes in a separate bowl. Stir two mixtures together (or puree potatoes as well in processor), and serve!! Sprinkle salt and pepper on top as you serve it so everyone can get their own amount.

Serves 4, about 3/4 - 1 cup each.
