Tilapia Tacos with Avocado drizzle

TACOS:1 lb of tilapia fillets, or any other firm, white-fleshed fish2 tsp chili powder4 whole wheat tortillas, 8-inch1 cup salsa1/2 cup chopped red onion1 cup shredded lettuce OR mesclun salad mixSAUCE:1/2 cup plain, non-fat Greek yogurt1/2 hass avocado, cubed2 cloves garlic1 tbsp. lemon juice (or to taste)1 tsp. hot sauce
First, make the sauce:
1.) Place all ingredients except hot sauce in a food processor and blend until creamy.
2.) Pour avocado sauce into a bowl, and add hot sauce to taste. Drizzle on tacos (below).
*If you don't have a food processor, mash the avocados well with a fork, then whisk with remaining ingredients*
To make the tacos:
1.) Heat olive oil in a skillet over medium heat. Meanwhile, rub the tilapia fillets with the chili powder.
2.) Cook the fish in the skillet until cooked through, turning once during the cooking -- this happens fast!
3.) Remove the fish to a clean plate or cutting board, and cut into cubes.
4.) Warm the salsa and tortillas in the microwave -- this will make the tortillas easier to fold, and will keep the salsa from cooling the entire taco before it's served.
5.) Divide fish, salsa, onion and lettuce equally between the tortillas. Drizzle with avocado sauce and enjoy!!
