Broccoli and Cheddar Cheese Soup

Ingredients
Butter, salted, .25 cupFlour, white,.25 cupChicken Broth, 1 can (10.75 oz)Milk, 2%, .5 cup or waterBroccoli, fresh, 3 cups, choppedCheddar Cheese, 1 cup, grated, divided
Directions
Melt the butter in a large pan, add the flour and let it bubble to make a roux. Add the chicken broth and about half a can of water. Stir as it thickens and add the broccoli. Turn the heat to low and simmer slowly for 30 minutes until the broccoli is tender. Mash with a potato masher, add half of the cheese and stir until smooth. Thin to desired consistency with milk or water, and season with salt and pepper. Serve with the remainder of the grated cheese on top.
