Chicken & Broccoli Pasta Salad

16 oz. whole wheat pasta (I use penne, farfalle, or rotini)2 lb. frozen broccoli florets16 oz. cooked chicken breast, diced1/3 c. extra-virgin olive oil1/2 c. balsamic vinegar2 T. soy sauce1.5 T. dijon mustard3-5 cloves garlic, minced
1. Cook pasta according to pkg. directions. Add frozen broccoli florets to pasta for the last 2-3 minutes of cooking time; drain & put in large bowl.
2. Meanwhile, combine oil, vinegar, soy sauce, mustard and minced garlic cloves in shaker or whisk in small bowl.
3. Add cooked chicken to pasta mixture, toss with dressing.
4. Refrigerate at least 4 hours or overnight.
Approx. 10 - 3 cup servings.
