2 potatoes, diced1 cup fresh or frozen pineapple chunks1 cup chopped bell pepper1 cup chopped raw mushrooms1 cup cherry tomatoes1 cup zucchini1 cup yellow squash1 whole de-boned skinless chicken breast, cubedOlive OilMrs. Grass Seasonings
Makes about 4 servings
In a cast iron skillet or any other skillet you can put on the grill, pour olive oil to coat the bottom of the pan. Cut chicken & vegetables in to like size pieces. Mix all together in a bowl, drizzle with a olive oil and sprinkle with seasonings.
Heat skillet on grill. Pour bowl of chicken, vegetables and pineapple into hot skillet. Stir occasionally to help everything cook through.
Can be covered with foil to help speed cook time.
