Blueberry - Cinnamon Pancakes

Ingredients
Flour, white, 2 cup Baking Powder, 4 tsp Granulated Sugar, 3 tbsp (or less, I used this much to counteract the tartness of the berries)1 Large eggskim milk 1 1/2 cups Cinnamon Applesauce 1/3 cup (You could use regular applesauce-I like the taste of cinnamon and blueberries.)Blueberries, fresh, 1.5 cup (If you don't like the taste of full berries, you could puree the blueberries in a blender.)(Sometimes I add 1 tsp of vanilla-not figured into nutritional values.)
Directions
1) Mix flour, baking powder, salt & sugar in large bowl. Set aside.
2) Beat egg. Add milk & applesauce.
3) Add egg mixture to flour mixture. Stir until just mixed, leaving batter slightly lumpy.
4) Fold in blueberries.
5) Pour batter onto heated, ungreased, non-stick griddle, 1/4 cup at a time. (Use Pam to coat griddle, if needed.)
6) Cook pancakes until edges are bubbled. Turn pancakes and brown the other side.

Makes 19 pancakes.

(I like these with a few sprays of no-cal butter spray.)

    Surprisingly good for a fat free pancake. I used egg substitute instead of a whole egg and plain applesauce since I did not have the cinnamon flavor. - 7/21/10

    I can’t stop eating them. I included the cinnamon and vanilla. I have CKD, I need to watch how much salt I use in a day. I used Featherweight Baking Powder. It is sodium free. My blueberries were sweet enough. What was missing? Salt of course. - 8/4/18

    Good pancakes, fluffy and tender. I added my blueberries still frozen as I've heard before they break down less that way, and they cooked up fine.
    Only concern was that despite scrupulously measuring out the recommended 1/4 c. per pancake it was all I could do to eek out 15. That makes 94 cal each - 2/8/14

    made these this morning, and are absolutely awesome and healthy!! i didn't have the cinnamon applesauce, so used plain but added 1 T grd cinnamon; also heated my frozen blueberries on defrost cycle for 10 minutes in microwave; will definitely be making these very often as my 15 yr old loved them!! - 7/11/11

    I didn't see the measurement for salt (I ended up doing 1/2 tsp just guessing on things), but I used vanilla soymilk since I needed to get rid of it. They were delicious and no one thought they tasted "diet"! Thanks for sharing. - 9/5/10
