Easy Orange Marmalade Tofu

Ingredients
1/2 cup dry jasmine rice2 four oz. chicken breasts, no skin7 or 8 rings of white onion (about 1 cup)1 tbsp canola oilThree-pepper grinder seasoning1 cup snow peas4 tbsp Smucker's brand organic orange marmalade
Directions
Grease your oven safe casserole dish down with canola oil. Cut about 7 rings of white onion and place in bottom of casserole dish. Season chicken breast with three-pepper grinder seasoning. Preheat oven to 350° and bake at 350-375° for 45 minutes or until chicken is thoroughly cooked. Heat orange marmalade in microwave for about 30 seconds. Pour over chicken, onions and rice. Serve with steamed snow peas. Serves 1
