Tuscan White Bean Dip

Ingredients
15 oz. can white beans (cannellini), drained and rinsed1/4 c. packed fresh basil-do NOT use dried!4 halves, sun-dried tomatoes packed in oil1 T. chopped fresh Italian (flat-leaf) parsley (or 1.5 t. dried parsley)1 t. chopped fresh oregano (or .5 t. dried)3 cloves roasted garlic (fresh can be used but roasted imparts a sweeter, nutty flavor that's less astringent)2 oz. Plain, non-fat yogurt
Directions
Place sun-dried tomatoes and roasted garlic cloves in the bottom of a food processor. Add beans, herbs, and yogurt. Puree. Salt and pepper to taste.

Spread on crostini, whole wheat crackers like triscuits, or use pita triangles for an appetizer.
