Nome's Veggie Daal served with Haddock

Ingredients
1 red onion, chopped1/2 chilli, chopped1 tsp chopped ginger2 garlic cloves, chopped1 tsp olive oil160g lentils, rinsed1/2 tsp turmeric1/2 tsp cumin300g tomatoes, roughly chopped50g tomato puree (3-4 tbsps)1/2 tsp garam masalasalt ("2 dashes")black pepperjuice of 1 lemon120g green beans, roughly chopped100g spinach, washed and roughly chopped if desired2 fillets haddock or other white fish
Directions
Fry onion, garlic, chili and ginger gently until soft.

Add turmeric and cumin and mix well.

Add chopped tomatoes and mix well.

Add lentils, cover with hot water, and bring to a rolling boil. Turn heat down and simmer. (Note cooking time and directions on lentils packet - they can vary.) Stir in tomato puree.

Put fish on to bake according to pack instructions, along with a dash of salt and pepper and a splash of lemon juice.

Cook beans in boiling water until soft (about 6 minutes).

When lentils are cooked (when they look mushy and undefined), add garam masala and seasoning.

Add spinach and mix until wilted. Stir in drained beans.

Serve daal topped with fish fillets.
