Vegetarian Chili & Rice Casserole

Ingredients
1/2 cup instant brown rice, uncooked3/4 cup onion, chopped1 can (15 oz) vegetarian chili with beans1 can (4.5 oz) chopped green chiles, drained1 cup reduced fat shredded mexican cheesesalsa or taco sauce, optional
Directions
1.Cook rice according to package directions.

2.Meanwhile, combine onion, chili & green chiles in a bowl. Add cooked rice.

3.Pour mixture into a sprayed casserole dish. Sprinkle with cheese. Bake at 350 degrees for 20-25 minutes or until bubbly.

4.Serve with salsa or taco sauce.
