Tomato Chickpea Curry

Ingredients
1 can chickpeas, rinsed and drained1 can diced tomatoes (I use the ones with Italian spices)1 small onion, chopped2 tsp minced garlic1 tbsp olive oil2 tsp curry powder2 tsp cumin1 cup quinoa
Directions
Heat olive oil in skillet. Saute onion until translucent. Add garlic, saute until fragrant. Add chickpeas and tomatoes, curry powder and cumin. Feel free to add a little more curry powder, until it is a lovely orange color. Cook over medium heat, about 10 minutes. Serve over quinoa or brown rice.
