Lemon Mousse With Raspberry Sauce

Ingredients
1 1/2 cups boiling water1 pkg (8-srvg size) Sugar Free Lemon Jello2 tsps grated lemon peelIce cubes1 cup cold apple juice8 oz Cool Whip Lite, thawed10 oz frozen raspberries, puréed in blender
Directions
* Stir boiling water into dry gelatin mix and lemon peel in large bowl at least 2 minutes until gelatin is completely dissolved.

* Add enough ice to apple juice to measure 1 3/4 cups. Stir into gelatin until slightly thickened

* Stir in Cool Whip with wire whisk until well blended

* Pour half of raspberry sauce into 10 dessert cups. Top with gelatin mixture and remaining raspberry sauce

* Refrigerate 4 hours or until firm. Store any leftover dessert in refrigerator.

* Garnish with fresh raspberries (if desired)
