Brown Rice Pilaf

1 T. Olive Oil1/2 onion chopped1/2 red bell pepper2 C. water1 C uncooked short-grain brown rice1/4 C. finely chopped parsleysalt and freshly ground black pepper optional
Heat oil in a medium saucepan. Add onion and bell pepper; cook 3 minutes. Add water and rice; bring to a boil. Reduce heat;cover and simmer 50 minutes or until rice is tender and liquid is absorbed. Fluff with a fork; stir in parsely. Season with salt and pepper if desired.
